Livarot, a cheese-making town.
A metallurgical town since the Middle Ages, Livarot became the place where the cheese market was held in the 17th century. The cheese maturing barns were also built there for the maturing of the cheeses
In 1910, the Georges Bisson cheese factory was established at the gates of the town, along with the new cheese box factory of Mr. Georges Leroy
The two factories became the driving force of the city and gave rhythm to its life until the 1960s
